On this page you will find information on the products and HERE you can download advice on use, conservation and anti-waste recipes . For any question or information, you can contact me by email at info@mindfulmorsel.com The term "Specialty Coffee" refers to exclusively high quality Arabica green coffee beans, which after roasting, and during extraction, reveal particular and complex aromas and flavours. The definition criteria for Specialty Arabica are those of the Specialty Coffee Association . A specialty coffee is such if it has the visual requirements established by the green and roasted coffee protocol and which, after tasting it with the cupping protocol, obtains a specific score of at least 80 , given on a scale from zero to 100. agricultural practices adopted, botanical varieties, post-harvest processes make it possible to create specific cup profiles. Beyond the technicalities that provide the quality standards to be respected, specialty coffee is much more . The specialty coffee supply chain is long and made up of many different players, each of which plays a fundamental part. If I take a very high quality coffee and then roast it or extract it badly, it is no longer so special. In fact, the final experience in the cup does not depend on a single actor in the production cycle , but goes from the farmer, to those who deal with raw processing and shipping, to the roaster, up to the barista who serves us the coffee.

How to store coffee?

Coffee should be stored away from sources of humidity, heat and light . Once the package has been opened, we advise you to keep it tightly closed in the fridge. You can decide to grind it yourself at the moment before preparing the coffee or have the beans ground by your trusted shop. However, consider that the organoleptic characteristics of coffee deteriorate quickly if exposed to the air, so it is important to keep the coffee in a closed container, if possible in the fridge.

Some curiosities about coffee that you may not have known

  • Why is it called that?: Around the year 1000 some Arab traders brought grains from their travels in Africa from which they boiled a drink called qahwa (exciting), translated into Turkish kahve . Some argue that the name derives from Caffa, a region of Ethiopia where it grows spontaneously.
  • Who drinks the most? The primacy of coffee consumption belongs to the Finns with 12 kg per year each.
  • The composer Bach loved coffee so much that he dedicated a cantata to it – Kaffeekantate – performed in Leipzig in 1732.
  • The devil's drink: It was Pope Clement VIII who rehabilitated coffee by pronouncing the fateful phrase " This drink of Satan is so good that it would be a shame to let only infidels drink it ".
