How to use artichokes waste

If you love artichokes but hate wasting food, you'll be happy to know that there are plenty of ways to reuse artichoke waste and turn it into something delicious and nutritious.

How to use artichokes with no waste

Here are a few ideas for how to make the most of every artichoke:

  1. Artichoke broth: When you're preparing artichokes, you'll likely end up with a lot of trimming and peeling. Don't throw these scraps away! Instead, save them and use them to make a flavorful artichoke broth. Simply add the scraps to a pot of water and simmer for about an hour. Strain the broth and use it as a base for soups, sauces, and other dishes.
  2. Artichoke dip: If you have leftover cooked artichoke hearts, you can easily turn them into a creamy and delicious dip. Simply blend the artichoke hearts with some cream cheese, mayonnaise, garlic, and your favorite seasonings. Serve the dip with crackers or veggies for a tasty snack.
  3. Artichoke pesto: Pesto is a flavorful sauce made from basil, pine nuts, and parmesan cheese, and it's a great way to use up leftover artichokes. Simply blend cooked artichoke hearts with the other pesto ingredients and use it as a topping for pasta, sandwiches, or pizzas.
  4. Artichoke heart salad: If you have leftover grilled or roasted artichoke hearts, you can turn them into a refreshing salad. Simply toss the artichoke hearts with some mixed greens, cherry tomatoes, feta cheese, and a homemade vinaigrette.
  5. Artichoke frittata: If you have leftover cooked artichoke hearts and some chickpea flour, you can easily whip up a delicious fari-frittata. Simply whisk together a few 200 gr of chickpea flour, 200 gr of flour and 50 gr of extra virgin olive oil and pour them into a skillet with the artichoke hearts and any other ingredients you like (herbs or red onion slices). Cook the fari-frittata until it's set and serve it hot!
